Riaz Phillips grew up in the UK surrounded by African and Caribbean culture, and food was the inescapable delight of his upbringing.
Now he is on a mission to tell the story of African and Caribbean food, through a series of books title, Belly Full. Phillips hopes to let the world in on a well known secret that African and Caribbean food cuts deeper than the spices. There is a rich history of why many Caribbean dishes in the UK were influenced by a crossroad of culture, bringing African, Arabic and South East Asian cuisine to the masses.
